Hand Crafted from New England Raw Winter Rye

Our small batch Pot & Column White Rye is hand crafted from New England raw winter rye and a touch of malted barley. Rye seed is planted in the early fall to cultivate over the winter months. The cold winter provides a crucial dormant period for this hearty cereal grain to thrive.  

Our white rye is slowly mashed, fermented and distilled to a higher proof than our barrel aged rye. The distillation slowly flows through our copper pot still and column creating a clean, clear spirit. This technique brings about unique on the nose aromas and palate tastes that create a gracious complexity from our barrel aged, double pot distilled rye. 

After distillation, the spirit is gently rested, allowing those complex aromas and flavors to fully develop. A bright plum fruitiness welcomes the nose as the first taste melts into a finish of a rising rye dough. This traditional American spirit can be enjoyed neat, on the rocks, or in your favorite cocktail.
